  • 2 Small flour tortillas
  • ½ cups Cheddar cheese - shredded
  • ½ Onion - diced
  • 2 Eggs - beaten
  • ½ Red pepper - diced
  • ½ cups Ham - diced
  • Salt and pepper
  • 1 Tbsp Butter


  • Whisk together the eggs, cheese, onion, and red pepper in a medium bowl.
  • Preheat your griddle to medium-high heat.
  • Melt one tablespoon of butter in the skillet. Add the egg mixture to the skillet and cook until the eggs are scrambled and set, about 3 to 5 minutes.
  • Add the diced ham to the griddle top and cook for several minutes until warm.
  • Remove the omelet from the heat and transfer it to a cutting board, slicing it into strips.
  • Spread another tablespoon of butter on your tortillas and add a layer of eggs to half of each tortilla, followed by the ham and the cheese.
  • Fold over the other half of your tortillas and transfer them back to the griddle.
  • Cover with a lid and cook for 2 minutes.
  • Flip your quesadillas and cook for another minute until both sides are crispy and the cheese melts.
  • Remove from heat and cut into quarters. Serve immediately with garnishes, such as salsa, avocado slices, or cilantro.

  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 Tbsp butter, divided
  • 2 tsp onion powder
  • 1 lb sausage
  • 4 whole wheat tortillas
  • Optional garnishes: salsa, sliced avocado, cilantro

The Method

Below are the steps required to make these three recipes.

  1. Make the Russian dressing. In a small bowl, combine the mayonnaise, ketchup, tomato paste, red wine vinegar, dill weed, and smoked paprika. Whisk until well combined.
  2. Heat up your griddle to medium heat.
  3. Cut the sourdough baguette in half, but not all the way through. The baguette should resemble a taco.
  4. Place the roast beef and pastrami on the griddle. Cook until the meat is slightly charred and crispy.
  5. Lower the heat on the griddle to low and put your swiss cheese on top of the grilled meat.
