The list below is enough to make two hearty chicken philly sandwiches, but if you are cooking for more you can easily double up the recipe to serve more portions. It’s also a great combination to keep in the fridge and reheat for a second helping later on.

* 8 oz. boneless chicken breasts or boneless chicken thighs
* salt and pepper
* 1/2 tsp. garlic powder
* 1 tsp. Italian seasoning
* 1 medium sweet red pepper
* 1 medium sweet orange pepper
* 1/2 large onion
* 2 tbsp. oil
* 4 slices Provolone Cheese
* 2 hearty rolls

You can mix up the peppers by replacing them with green or yellow pepper if you prefer, or if you’re looking for an extra kick even try a touch of jalapeno. For the oil, you can use your favorite, avocado oil, olive oil, or even toasted sesame oil all work really well.

Provolone cheese is a great choice as it melts so beautifully, but you can use white American cheese, Monterey Jack, or even Cheez Whizz.

For the rolls, the traditional choice for a Philly Cheesesteak is to use Amoroso rolls, but you can use sub rolls if you prefer. Chicken Philly is designed to be juicy, so whatever bread you choose needs to be sturdy enough to absorb some of that wonderful juice but still hold your sandwich together. Hoagie buns are a great alternative, and even hot dog rolls can also work well.

Ingredients
  

  • 8 oz boneless chicken breasts or boneless chicken thighs
  • salt and pepper
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 medium sweet red pepper
  • 1 medium sweet orange pepper
  • ½ large onion
  • 2 tbsp oil
  • 4 slices Provolone Cheese
  • 2 hearty rolls

Instructions
 

  • Firstly, season the chicken with salt, pepper, and 1/4 tsp garlic powder. Allow the chicken to rest at room temperature for these delicious flavors to absorb while you prepare the rest of the fillings.
  • Using a clean chopping board, thinly slice the peppers and onions.
  • Add a tablespoon of oil to a large skillet and set on medium heat.
  • Once the skillet is warmed, add the chicken and cook, stirring gently, for about 6-8 minutes until the chicken is completely cooked through.
  • Remove the chicken from the skillet and set aside in a foil-covered dish.
  • Next, add the peppers and onions to the skillet with a further tablespoon of oil.
  • Season the vegetables with the remaining garlic powder, Italian seasoning, and a dash of salt and pepper.
  • Turn the heat up to medium/high and cook the vegetables, again stirring occasionally. Cook until soft and slightly charred, about 6-8 minutes.
  • Cut the cooked chicken into thin slices using a sharp knife and add to the pan, along with any juices. Turn the heat down to medium/low.
  • Stir to combine the chicken and vegetables and separate them into two halves, on either side of the skillet.
  • Top each half with two slices of cheese and allow to melt. Adding a lid to the skillet will speed up the melting.
  • While the cheese is melting, heat up your rolls in the microwave. Alternatively, you could pop your rolls in the oven but check the timings carefully so they are hot and ready.
  • Once the cheese is melted, slice your rolls and add the filling to each one using a spatula.
  • Serve your chicken philly rolls hot and enjoy!

GET CREATIVE!

While this chicken philly cheesesteak is delicious on its own, you might like to add some extras to give your sandwich a personal touch! Hot sauce makes an excellent topping, as does cool mayonnaise or ketchup. Or, you might like to try adding some barbecue sauce to mix those flavors up a little.
