Ingredients
  

  • 4 portions salmon fillets (de-boned and cleaned)
  • 2 tbsp extra virgin olive oil
  • ½ cups sweet yellow/white onion (chopped)
  • 2 tsp raw garlic (minced)
  • 4 oz cream cheese
  • ½ cups chicken/vegetable stock (homemade/store-bought)
  • ½ cups milk of your choice (traditional/plant-based)
  • cups freshly grated Parmesan cheese
  • 2 tbsp freshly squeezed lemon juice
  • 2 cups baby spinach (chopped)
  • 2 tbsp fresh dill (chopped)
  • ½ tsp thyme (dried)
  • Salt and pepper
  • 2 tbsp Fresh parsley chopped

Instructions
 

Step 1: Pan-sear the salmon fillets

  • You have to use a non-stick large saucepan. As it is a one-pot type of recipe, so do make sure that you choose the pan carefully.
  • On medium heat, heat the olive oil and pan-sear the salmon fillets with salt and pepper. How much cooked you want the fish to be is up to your taste preference. But do know that golden brown and crisp salmon fillets are ideal for this dish as per many foodies and food critics.
  • Once the fish is cooked as per your liking, take it off the pan and keep them aside and covered.

Step 2: Cook the aromatics and herbs

  • In the same pan (no requirement for adding oil as the fish fillets will release oil) add onions and sauté them for 3 minutes or until softened.
  • Add the garlic and stir for a minute or until the raw smell of garlic is gone.
  • Then add all the herbs (baby spinach, dill, and thyme) and sauté for 5 minutes or until the spinach wilts down. You can add salt and pepper during this time.

Step 3: Build the base of the creamy salmon sauce

  • After the herbs are sautéed, begin to build the creamy sauce by adding in the stock and lemon juice first.
  • After the liquid mixture comes to a simmer, you have to reduce the heat down to low or medium-low to ensure the dairy products do not split.
  • So, after reducing the heat, add the milk first and then the cream cheese which you have to incorporate into the liquid.
  • Simmer for 3-4 minutes, the sauce will be a bit thicker by then.
  • Add in the chopped (grated or powered will work as well) Parmesan cheese and simmer for 4 minutes to thicken the sauce further.

Step 4: Finishing touches

  • Once the sauce is thickened as per your liking (the ideal consistency should be lightly thickened yet thick enough to coat the back of the cooking spatula).
  • Remove it from heat and add the pan-seared salmon fillets on top of the sauce or the sauce on top of the fillets.
  • Sprinkle the parsley for garnishing, and serve hot.
