What Is Cube Steak?

Some people mistakenly buy cube steak, thinking it is ground beef. Its waffled texture gives it the appearance of ground beef, but it’s not ground beef. Cube steak is a pre-tenderized steak. It is from the top or bottom round, near the rump.

This cut of steak comes from a tough portion of the cow. It is bought for stew or other slow-cooked meals in a crock pot so the proteins can break down and tenderize. Instead of letting the heat break it down, cubed steak takes advantage of a meat tenderizer before being cooked.

Ingredients

  • 2 lb Cube steak
  • 2 teaspoons Kosher salt
  • 1½ teaspoons Fresh ground black pepper
  • 1 cup All-purpose flour
  • 2 teaspoons Garlic powder
  • 1 teaspoon Vegetable oil
  • 1 Large yellow onion (sliced into ½ inch rings)
  • 3 Tbsp Butter
  • 1 1-oz packet of onion soup mix
  • 1½ cups Water

Instructions

  • After you have your required ingredients, you are ready to cook your cube steak! This delicious, gravy-covered cube steak recipe is fast and easy.
  • Season your steaks with salt and pepper.
  • On a large plate, combine flour and garlic powder. Dredge your steaks in the flour mixture. Save the remaining dredge mixture, you will use it later.
  • Heat vegetable oil in a large skillet over medium-high heat on the stovetop.
  • Fry the seasoned cube steaks in batches until they are a deep golden color, about two minutes on each side. Transfer the steaks to a paper-towel-lined plate.
  • Using the same skillet, reduce the heat to medium and add the onion slices. Cook the onions until they are soft and turn golden, about 10 minutes.
  • Scrape the bottom of the pan while you are cooking the onions to get all of the lost meat and dredging mixture.
  • Add the butter to the skillet and melt into onions.
  • Sprinkle the onion soup mix packet into the onion-butter mixture. Add one tablespoon of the reserved dredge mixture to the skillet and begin stirring.
  • Cook the mixture, stirring constantly until it begins to bubble and turn golden. This will take about ten minutes.
  • Slowly add the water, a quarter of a cup at a time. Lightly simmer the gravy until it has thickened. Return the fried steaks to the pan and smother them in gravy.

Tips & Tricks for Cube Steak Recipe

While this recipe is hard to mess up, there are some things you need to be aware of when cooking cube steak. Whether you use this recipe or another one you find, remember these tips to get the best cube steak.

Don’t Overcrowd

Like with most proteins, it is important to not crowd the pan when you are cooking cube steak. It is hard to tell if your cube steak is done if there are too many steaks in the pan. Without a good view, you are likely to overcook your cube steak, which makes it dry and tough.

Make Sure Your Skillet Is Hot Enough

You want your pan to be nice and hot before you add your steak. If your pan isn’t hot enough, your steak has to sit in the pan for an extended amount of time, resulting in dry and overcooked cube steak.

Cook Quickly

You want to cook your cube steak quickly. This cut of meat doesn’t have good marbling, so it is liable to dry out. The quicker you get it in and out of the pan, the juicier it will be! Get a hot pan, sear both sides for just a couple of minutes and get it out of the pan.

Tenderize It Yourself

If you are buying cubed steak from an inexperienced butcher, they might not tenderize the cube steak right. You can either re-tenderize your already tenderized cube steak, or you can buy a cut of top round and tenderize it yourself to make cube steak.
