Lemon Rice:

  • 1.5 cups Uncooked basmati rice
  • 1 Onion, diced
  • 2 Cloves garlic, minced
  • 1 Tbsp Ginger, grated
  • 1 teaspoon Cumin
  • 2 Tbsp Oil
  • 1 teaspoon Mustard seeds
  • Roasted peanuts
  • ½ teaspoons Turmeric powder
  • 2 Chili peppers
  • 1.5 teaspoons Garam masala
  • 1 Lemon, zested and juiced
  • ½ Tbsp Ginger
  • Salt and pepper

Lemon Curry:

  • Chicken cut into bite-sized pieces
  • 1 teaspoon Mustard seeds
  • 1 Onion, diced
  • 2 Cloves garlic, minced
  • 1 Tbsp Ginger, grated
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 can Diced tomatoes (14 ounces)
  • 1 can Coconut milk (14 ounces)
  • 1 Lemon, zested and juiced
  • 1 cup Green beans, chopped
  • Salt and pepper
  • ¼ cups Cilantro, chopped


Lemon Rice:

  • Wash the rice under running water at least three times or until the watch is no longer cloudy.
  • Prepare the vegetables. It would be best to cut the peppers and onions the same size so they will cook evenly.
  • In a large pan, heat the oil over medium heat. Roast the dried spices and mustard seed until they become aromatic.
  • Add the ginger, chili peppers, onion, and garlic. Saute for a minute before adding the rice and toasting the rice for another 2 minutes.
  • Add 2 cups of water and lemon juice, and bring to a boil before reducing to a simmer for about 20 minutes. Cover the rice while it is simmering.
  • Once the rice is cooked and the water is gone, stir in the lemon zest, roasted peanuts, and salt and pepper to taste. Fluff with a fork and serve hot with your choice of protein or vegetables.

Lemon Curry:

  • Heat oil over medium heat and add the mustard seeds to a pan. Once they start popping, add the onion, garlic, and ginger. Cook until soft before adding turmeric, cumin, and green beans.
  • Stir in diced tomatoes and coconut milk, and bring to a simmer for about 10 minutes before adding your protein of choice or chickpeas.
  • Stir in lemon zest and juice, salt and pepper to taste, and cilantro before serving with rice or your choice of grain.
